Wooden Grilling Planks
Adding wooden grilling planks to your grill adds a gourmet touch to any foods you grill – from hamburgers to salmon.
You can get these grill planks in mesquite, oak, cedar, alder, or really just about any wood. Serious grillers believe they add a smoky, earthy flavor to grilled foods. Think about how food tastes when cooked in the mountains, and you have a good idea about how this grilled food will taste.
Certainly you can add wood chips to your coals, but true grill experts say the wood planks are best for a true smoky flavor. To grill your meats with a plank:
First, soak the grill plank in water. You can fill a tub or pot, or even a heavy plastic bag with water. Submerge the wood plank for at least 20 minutes. This will add moisture, help to bring the smoky flavor out of the grill plank, and help prevent the wood setting fire while cooking!
Second, get your grill hot the way you normally would; when you add the soaked wood grill planks, they will smoke if the temperature is right. Add the grill planks, and be sure to keep a spray bottle of water nearby. You don’t want to end up calling 911 because your wood planks set on fire! Add the food, and cook as you normally would.
