Whole Hog Grilling
Ok, so you want to really impress the crowd at your next big get-together. You could hire a caterer, sure, or you could spend days planning a big buffet with dozens of food choices. You could also enjoy the art and craft of whole hog grilling and watch your crowd “ooh” and “aah” over the novelty of it all.
Grilling a whole hog is perfect when you need to feed about 40 to 50 people. It’s a great choice for a family reunion, church social, or football tailgate party. Here are some things you should know:
Order a hog that’s about 80 to 100 pounds. For your hog grilling purposes, you want the hog fatty enough to provide good flavor, but lean enough that you don’t start any great fires.
Whole hog grilling requires a fresh hog, ideally one that’s been butterflied. If you can’t store it in the fridge until it’s time to grill it, get the whole hog right before you need to cook it.
Since you’re cooking a whole hog, and he’s big, allow about 10 hours for the hog grilling. This can certainly be part of the party’s entertainment.
Your big ole hog is done when he registers about 170 degrees on a meat thermometer.
